Savory Cabbage With Bacon Recipe
SAVOY CABBAGE WITH BACON This recipe came from an estate sale. I obtained it when I purchased the family collection from the Merit Estate in Richardson, Texas in 1982.

Ingredients
  • 3 thick slices bacon
  • 2 large cloves garlic minced
  • 2 small tender leeks split rinsed and thinly sliced
  • 1 large Savoy cabbage core removed and thinly sliced
  • 1 cup chicken stock
  • 1/4 cup dry white wine
  • 1-1/4 cup cooked white beans
  • 1 tablespoon fresh sage
  • 1 tablespoon snipped chives
  • 1 teaspoon freshly ground black pepper

Directions
  1. Cook bacon in nonstick skillet over medium high heat until crisp about 3 minutes.
  2. Use slotted spoon to set bacon aside.
  3. Drain off all but 2 tablespoons fat then add garlic and leeks to skillet and cook 2 minutes.
  4. Add cabbage, stock, wine and beans then gently toss to combine.
  5. Simmer until cabbage is just beginning to wilt 3 minutes.
  6. Crumble bacon then toss cooked mixture with bacon, sage, chives and pepper.
