Ginger Jalapeno Slaw

- 1/3 cup unseasoned rice vinegar shopping list
- 2 tablespoons olive oil shopping list
- 2 teaspoons grated, peeled fresh ginger shopping list
- ½ teaspoon salt shopping list
- 2 jalapeno chiles, seeded and minced shopping list
- 1 pound green cabbage, thinly sliced (about 6 cups) shopping list
- ½ pound red cabbage, thinly sliced (about 3 cups) shopping list
- 3 medium carrots, finely shredded (about 1 ½ cups) shopping list
- 2 green onions, thinly sliced shopping list
How to make it
- In a large bowl, whisk vinegar, oil, ginger, salt and jalapenos until blended. Add everything else.
- Cover and refrigerate coleslaw 1 hour before serving to allow flavors to blend.
