Ginger Jalapeno Slaw Recipe

Ingredients
  • 1/3 cup unseasoned rice vinegar
  • 2 tablespoons olive oil
  • 2 teaspoons grated, peeled fresh ginger
  • ½ teaspoon salt
  • 2 jalapeno chiles, seeded and minced
  • 1 pound green cabbage, thinly sliced (about 6 cups)
  • ½ pound red cabbage, thinly sliced (about 3 cups)
  • 3 medium carrots, finely shredded (about 1 ½ cups)
  • 2 green onions, thinly sliced

Directions
  1. In a large bowl, whisk vinegar, oil, ginger, salt and jalapenos until blended. Add everything else.
  2. Cover and refrigerate coleslaw 1 hour before serving to allow flavors to blend.
