Spicy Almond Chicken Recipe
SPICY ALMOND CHICKEN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pfeiffer Estate in Kerrville, Texas in 1997.

Ingredients
  • 3 tablespoons butter
  • 3 pound broiler chicken cut up and skinned
  • 14 ounce red currant jelly
  • 1/2 cup prepared mustard
  • 1/2 cup slivered almonds
  • 3 tablespoons brown sugar
  • 2 tablespoons lemon juice
  • 1/2 teaspoon ground cinnamon

Directions
  1. Melt butter in large skillet over medium heat.
  2. Add chicken and cook 10 minutes or until lightly browned on all sides.
  3. Place chicken in lightly greased rectangular baking dish.
  4. Add remaining ingredients to skillet then cook over medium heat until jelly dissolves.
  5. Stir occasionally then pour over chicken and cover then bake at 350 for 30 minutes.
  6. Uncover and bake an additional 10 minutes or until chicken is done.
