Snapper With Ginger Salsa

- 3 medium tomatoes peeled and diced shopping list
- 2 tablespoons scallions chopped shopping list
- 2 tablespoons cilantro chopped shopping list
- 2 tablespoons jicama chopped shopping list
- 3 tablespoons fresh lime juice divided shopping list
- 2 tablespoon jalapeno peppers minced shopping list
- 2 teaspoons fresh ginger chopped shopping list
- 4 snapper filets shopping list
- 2 cups dry white wine shopping list
How to make it
- Combine tomatoes, onion, cilantro, jicama, 2 tablespoons lime juice, jalapeno and ginger in bowl.
- Cover and let sit for at least one hour then preheat oven to 425.
- Place snapper in shallow pan and cover with wine and remaining lime juice.
- Cover pan with foil and bake 25 minutes.
- Arrange fish on serving plate and spoon salsa on top.
