SNAPPER WITH GINGER SALSA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Fabian Estate in Crowley, Texas in 1990.

Ingredients
  • 3 medium tomatoes peeled and diced
  • 2 tablespoons scallions chopped
  • 2 tablespoons cilantro chopped
  • 2 tablespoons jicama chopped
  • 3 tablespoons fresh lime juice divided
  • 2 tablespoon jalapeno peppers minced
  • 2 teaspoons fresh ginger chopped
  • 4 snapper filets
  • 2 cups dry white wine

Directions
  1. Combine tomatoes, onion, cilantro, jicama, 2 tablespoons lime juice, jalapeno and ginger in bowl.
  2. Cover and let sit for at least one hour then preheat oven to 425.
  3. Place snapper in shallow pan and cover with wine and remaining lime juice.
  4. Cover pan with foil and bake 25 minutes.
  5. Arrange fish on serving plate and spoon salsa on top.
