Pineapple Shrimp Salad

- 6 cups water shopping list
- 2 pounds fresh medium shrimp shopping list
- 1 cup celery chopped fine shopping list
- 20 ounce can unsweetened pineapple chunks drained shopping list
- 1/3 cup raisins shopping list
- 1/2 cup mayonnaise shopping list
- 2 teaspoons curry powder shopping list
- 4 pita bread pockets shopping list
- 4 leave lettuce shopping list
How to make it
- Bring water to a boil and add shrimp then cook 5 minutes and drain well.
- Rinse with cold water then peel.
- Combine shrimp and remaining ingredients then refrigerate at least 1 hour before serving.
- Serve in a pita bread lined with lettuce.

I was living on shrimp last week because I was in Puerto Rico. A Minnesota girl has to take advantage of shrimp when she can. Now I want to make this recipe too. Yum. -Lori
