Pineapple Shrimp Salad Recipe
This is a recipe I obtained from a friend who served this with crackers at a bridal shower last month. I have made it since then and stuffed it into pitas. Makes a great lunch. Enjoy

Ingredients
  • 6 cups water
  • 2 pounds fresh medium shrimp
  • 1 cup celery chopped fine
  • 20 ounce can unsweetened pineapple chunks drained
  • 1/3 cup raisins
  • 1/2 cup mayonnaise
  • 2 teaspoons curry powder
  • 4 pita bread pockets
  • 4 leave lettuce

Directions
  1. Bring water to a boil and add shrimp then cook 5 minutes and drain well.
  2. Rinse with cold water then peel.
  3. Combine shrimp and remaining ingredients then refrigerate at least 1 hour before serving.
  4. Serve in a pita bread lined with lettuce.

Okay, it's time to go to lunch. I could totally go for this on a savory waffle right now.


I was living on shrimp last week because I was in Puerto Rico. A Minnesota girl has to take advantage of shrimp when she can. Now I want to make this recipe too. Yum. -Lori
