Ingredients
  • 2 salmon filets approximately 6 ounces each cut in thin long strips
  • 1 teaspoon Cajun seasoning
  • 4 tablespoons olive oil
  • 3/4 cup breadcrumbs
  • 1/4 cup parmesan cheese
  • 2 tablespoons fresh chopped dill
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground white pepper
  • Pasta:
  • 1 tablespoon heavy cream
  • 1 tablespoon butter
  • 2 cups fully cooked egg noodles
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon chopped fresh dill

Directions
  1. Sprinkle both sides of filets with Cajun seasoning then rub in 1 tablespoon olive oil.
  2. Combine breadcrumbs, parmesan, dill, salt, pepper and 1 tablespoon olive oil.
  3. Dredge filets in breadcrumb mixture pressing firmly to make crumbs adhere.
  4. In medium sauté pan heat remaining oil over medium high heat and carefully add salmon.
  5. When first side has formed a golden crust turn carefully then reduce heat to low.
  6. Cook 3 minutes more then serve salmon on bed of pasta.
  7. To make pasta heat cream and butter over low heat then add noodles.
  8. Season with salt and pepper then toss until well mixed and heated through.
  9. Remove from heat and toss in dill then serve immediately.
