Carrot Cilantro and Chile Soup

- 3 peeled and sliced large carrots shopping list
- 1 peeled and chopped large potato shopping list
- 5 c. of vegetable broth shopping list
- 1 tbp. of chopped fresh cilantro shopping list
- 1 tsp. of chile paste shopping list
- 1 chopped onion shopping list
- 1 tbsp. of olive oil shopping list
- 1 tsp. of crushed garlic shopping list
How to make it
- First you want to add some olive oil over medium flame.
- Saute your garlic, cilantro, and chili paste.
- Add onion and saute.
- Slowly stir in the carrots and potatle letting this cook for around 5 min.
- Now add your broth and stir over a medium flame for approx. 45 min.
- Once your carrots and potatoes are soft, puree in the blender
- Transfer to serving bowls!
