Spiced Pot Roast Recipe
SPICED POT ROAST This recipe came from an estate sale. I obtained it when I purchased the family collection from the Waley Estate in Greenville, Texas in 1987.

Ingredients
  • 2 pound boneless chuck roast
  • 1 bay leaf
  • 2 teaspoons salt
  • 2 teaspoons freshly ground black pepper
  • 1/4 cup white vinegar
  • 1/4 cup water
  • 1 medium onion sliced
  • 1 teaspoon whole peppercorns

Directions
  1. Rub meat with salt and pepper and place in glass bowl.
  2. Add onion, bay leaf and whole peppercorns.
  3. Marinate meat in vinegar and water for 24 hours.
  4. Drain and reserve liquid then place meat in roasting pan and sear.
  5. Add 3 tablespoons spiced vinegar mixture.
  6. Cover and cook in slow oven for 1-1/2 hours.
