Lucky Chocolate Cake

- 2 cups cooked blackeyed peas, drained and rinsed shopping list
- 12 oz silken firm tofu (I used Mori-Nu Lite) shopping list
- 1/3 cup sugar shopping list
- 1/3 cup brown sugar shopping list
- 5 oz semisweet chocolate, chopped shopping list
- 4.5 oz bittersweet (70% +) chocolate, chopped shopping list
- 1/4 cup cocoa, sifted shopping list
- 3/4 tsp baking powder shopping list
- 1/4 tsp baking soda shopping list
How to make it
- Preheat oven to 350F, lightly grease and line a 9×5 loaf pan or 9" springform.
- Combine the black eyed peas and tofu into your food processor, process aout 6-7 minutes, until the mixture is completely smooth.
- Add the sugars and pulse to combine.
- In a double boiler, melt the chocolates together.
- Add to the food processor, and then let it run for 4 minutes longer, scraping down the sides halfway through.
- Sift together the cocoa, baking powder, and baking soda and add to the processor mixture, pulsing to combine.
- Bake for 60 - 70 minutes, until a toothpick inserted into the center comes out mostly clean.
- Chill overnight, but bring to room temperature before serving.
