How to make it

  • Preheat oven to 350F, lightly grease and line a 9×5 loaf pan or 9" springform.
  • Combine the black eyed peas and tofu into your food processor, process aout 6-7 minutes, until the mixture is completely smooth.
  • Add the sugars and pulse to combine.
  • In a double boiler, melt the chocolates together.
  • Add to the food processor, and then let it run for 4 minutes longer, scraping down the sides halfway through.
  • Sift together the cocoa, baking powder, and baking soda and add to the processor mixture, pulsing to combine.
  • Bake for 60 - 70 minutes, until a toothpick inserted into the center comes out mostly clean.
  • Chill overnight, but bring to room temperature before serving.
