Barley Burger Stew Recipe
This is a super easy dish and feel free to throw in any vegetables you like. I'll often throw in a couple cups of cooked legumes into it.

Ingredients
  • 1 pound ground beef (or turkey)
  • 1 large onion, chopped
  • 1/2 cup chopped celery
  • 5 cups tomato juice (or V8)
  • 1 (14.5oz) can diced tomatoes
  • 2 cups water
  • 1 cup medium pearl barley
  • 2 teaspoon chili powder
  • 1/2 teaspoon pepper

Directions
  1. In a saucepan over medium heat, cook beef, onion and celery until meat is no longer pink; drain. Stir in tomato juice, water, barley, chili powder, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 50-60 minutes or until barley is tender.

  3. Brown meat in skillet; drain. Combine all ingredients in crockpot and cook on low 8-9 hours.

You are right, it is simple. but it does sound good. I don't think we eat enough barley. One of those grains we tend to forget.
