Salmon And Pesto With Rice For Two

- 3/4 to 1 lb. salmon fillet, skinned and cut into1" pieces shopping list
- 3 Tbs. pesto shopping list
- 2 Tbs. butter shopping list
- 2 Tbs. finely chopped onion (or one shallot, finely chopped) shopping list
- 1 clove minced garlic shopping list
- 1/2 cup uncooked long grain white rice shopping list
- 1-1/3 cup chicken stock shopping list
- 1/4 cup dry white wine shopping list
- fresh lemon juice shopping list
How to make it
- Toss salmon pieces with pesto to coat. Set aside.
- In a medium pan over medium heat, melt butter and saute onion for two minutes. Add garlic and saute for another minute
- Stir in rice, chicken stock and wine. Reduce heat, cover and simmer 15 minutes.
- Without stirring rice, place salmon pieces in the pan. Cover and continue cooking 25 to 30 minutes until rice is tender and salmon is easily flaked with a fork.
- Sprinkle with lemon juice and serve immediately.
