How to make it

  • Toss salmon pieces with pesto to coat. Set aside.
  • In a medium pan over medium heat, melt butter and saute onion for two minutes. Add garlic and saute for another minute
  • Stir in rice, chicken stock and wine. Reduce heat, cover and simmer 15 minutes.
  • Without stirring rice, place salmon pieces in the pan. Cover and continue cooking 25 to 30 minutes until rice is tender and salmon is easily flaked with a fork.
  • Sprinkle with lemon juice and serve immediately.
