I found a recipe at allrecipes and adapted it to my taste and desired serving size. Pesto coated salmon over steamed rice. An easy one pan dish.

Ingredients
  • 3/4 to 1 lb. salmon fillet, skinned and cut into1" pieces
  • 3 Tbs. pesto
  • 2 Tbs. butter
  • 2 Tbs. finely chopped onion (or one shallot, finely chopped)
  • 1 clove minced garlic
  • 1/2 cup uncooked long grain white rice
  • 1-1/3 cup chicken stock
  • 1/4 cup dry white wine
  • Fresh lemon juice

Directions
  1. Toss salmon pieces with pesto to coat. Set aside.
  2. In a medium pan over medium heat, melt butter and saute onion for two minutes. Add garlic and saute for another minute
  3. Stir in rice, chicken stock and wine. Reduce heat, cover and simmer 15 minutes.
  4. Without stirring rice, place salmon pieces in the pan. Cover and continue cooking 25 to 30 minutes until rice is tender and salmon is easily flaked with a fork.
  5. Sprinkle with lemon juice and serve immediately.
