How to make it

  • Whisk the mayonnaise, creme fraiche, chili sauce, horseradish, capers, Tabasco sauce, Worcestershire, lemon juice, and curry powder together in a mixing bowl. Season with salt and white pepper. Taste and correct the seasonings.
  • If you do not have creme fraiche on hand, you can substitute 1 1/4 cup sour cream and add another Tablespoon of lemon juice.
  • Makes a nice spread for crispy calamari, or a fried fish sandwich, or poached halibut. If you have left overs, try it on a roast beef sandwich!
