Ingredients
  • 2 cup Mayonnaise
  • 1 1/2 cup creme fraiche
  • 5 tb chili sauce
  • 1-2 tb grated horseradish, drained
  • 3 tb chopped capers
  • 5 tsp Tabasco sauce
  • 4 tsp Worcestershire sauce
  • 3 tb fresh lemon juice
  • 1/2 tsp curry sauce
  • coarse salt and white pepper

Directions
  1. Whisk the mayonnaise, creme fraiche, chili sauce, horseradish, capers, Tabasco sauce, Worcestershire, lemon juice, and curry powder together in a mixing bowl. Season with salt and white pepper. Taste and correct the seasonings.
  2. If you do not have creme fraiche on hand, you can substitute 1 1/4 cup sour cream and add another Tablespoon of lemon juice.
  3. Makes a nice spread for crispy calamari, or a fried fish sandwich, or poached halibut. If you have left overs, try it on a roast beef sandwich!
