Low-Fat Chicken Vindaloo Crockpot

- 2T vinegar shopping list
- 3 garlic clove, minced shopping list
- 2-3T brown sugar (I use Sugar Twin brown sugar) shopping list
- 1 1/2T fresh ginger shopping list
- 1T mustard seeds shopping list
- 1T ground cumin shopping list
- 3/4T curry powder shopping list
- 1/4t ground cardamom shopping list
- 1/4t ground cloves shopping list
- 1/4t ground hot pepper shopping list
- 2t olive oil shopping list
- 1 cup tomato sauce shopping list
- 1 cinnamon stick shopping list
- 1 small onion, chopped shopping list
- 4 (4oz) boneless skinless chicken breast half, quartered shopping list
- 2 tablespoons fresh parsley, chopped shopping list
How to make it
- Puree first 12 ingredients in a blender.
- Pour into the crock pot, add cinnamon stick and onion and mix well.
- Add chicken and turn to cover.
- Cook on low for 5-6 hours.
- Sprinkle with chopped parsley before serving.
