Ingredients
  • 4-6 lb Corned Beef Brisket
  • 1 Qt ale (or enough to cover)
  • 6 peppercorns
  • 3 bay leaves
  • 1/2 tsp thyme
  • small white potatoes pealed to fill the pot
  • 2 cups (about) small onions
  • 1 cup (about) baby carrots
  • wedges of green cabbage

Directions
  1. Simmer all ingredients except the cabbage in the liquor and seasonings at a low heat setting 6 hours
  2. last two hours add the cabbage and cook until all ingredients are tender.
