Ingredients

4-6 lb Corned Beef Brisket

1 Qt ale (or enough to cover)

6 peppercorns

3 bay leaves

1/2 tsp thyme

small white potatoes pealed to fill the pot

2 cups (about) small onions

1 cup (about) baby carrots

wedges of green cabbage

Directions

Simmer all ingredients except the cabbage in the liquor and seasonings at a low heat setting 6 hours

last two hours add the cabbage and cook until all ingredients are tender.
