Mushroom Chicken With Sauce Recipe
A dish my mom used to make when she didn't have all day to create some masterpiece, but just as good as some much more time consuming entrees!

Ingredients
  • 2 onions, sliced
  • 5-6 cloves garlic
  • 12 - 16 mushrooms (champignons work fine), sliced
  • 1 can cream of mushroom soup (use low fat if you like)
  • 1 can 1% sour cream
  • 1 tablespoon chicken bouillon powder (or equivalent in paste or cubes)
  • 1-2 tablespoons olive oil, or cooking spray
  • 8 medium sized chicken breast halves, skin removed

Directions
  1. Brown onions & garlic in non-stick pan
  2. add mushrooms and saute until tender
  3. add mushroom soup and sour cream, mix with bouillon
  4. set aside
  5. in another pan, brown chicken breasts in olive oil
  6. put layer of chicken in 8 x 11" pan
  7. cover with mushroom sauce
  8. bake for approximately 1 hour, at 365 degrees celsius.
  9. serve over whole wheat pasta or brown rice
