Mushroom Chicken With Sauce

A dish my mom used to make when she didn't have all day to create some masterpiece, but just as good as some much more time consuming entrees!
Ingredients
- 2 onions, sliced shopping list
- 5-6 cloves garlic shopping list
- 12 - 16 mushrooms (champignons work fine), sliced shopping list
- 1 can cream of mushroom soup (use low fat if you like) shopping list
- 1 can 1% sour cream shopping list
- 1 tablespoon chicken bouillon powder (or equivalent in paste or cubes) shopping list
- 1-2 tablespoons olive oil, or cooking spray shopping list
- 8 medium sized chicken breast halves, skin removed shopping list
How to make it
- Brown onions & garlic in non-stick pan
- add mushrooms and saute until tender
- add mushroom soup and sour cream, mix with bouillon
- set aside
- in another pan, brown chicken breasts in olive oil
- put layer of chicken in 8 x 11" pan
- cover with mushroom sauce
- bake for approximately 1 hour, at 365 degrees celsius.
- serve over whole wheat pasta or brown rice
