Rotel Chili Redux Recipe

Ingredients

1lb 80-85% lean beef

1 can Rotel chili mix

1 can Rotel hot

1 large can tomato sauce

2 fresh diced garlic cloves

1/4 cup pickled jalapenos

2 tbs pickled jalapeno juice

1 tbs vegetable oil

Directions

Put the oil in a large saucepan over medium-high heat

Add garlic and cook for one minute

Add beef and cook until browned

Put Rotel hot, jalapenos and jalapeno juice into a food processor and mix on high until thoroughly broken down - don't use a blender as that will mix it too finely

When beef is browned, add in Rotel chili mix, blended Rotel hot and tomato sauce

Simmer on medium-low for 10 minutes

Serve with grated cheddar and tortilla chips
