Rotel Chili Redux

- 1lb 80-85% lean beef shopping list
- 1 can rotel chili mix shopping list
- 1 can rotel hot shopping list
- 1 large can tomato sauce shopping list
- 2 fresh diced garlic cloves shopping list
- 1/4 cup pickled jalapenos shopping list
- 2 tbs pickled jalapeno juice shopping list
- 1 tbs vegetable oil shopping list
How to make it
- Put the oil in a large saucepan over medium-high heat
- Add garlic and cook for one minute
- Add beef and cook until browned
- Put Rotel hot, jalapenos and jalapeno juice into a food processor and mix on high until thoroughly broken down - don't use a blender as that will mix it too finely
- When beef is browned, add in Rotel chili mix, blended Rotel hot and tomato sauce
- Simmer on medium-low for 10 minutes
- Serve with grated cheddar and tortilla chips
