Sensational Creamy Mushroom Dish Recipe
SENSATIONAL CREAMY MUSHROOM DISH This recipe comes from my mother. She has been making these for as long as I can remember. We like to eat it over toast. A superb dish with lots of flavor.

Ingredients
  • 1-1/4 cup vegetable oil
  • 3 cloves garlic finely minced
  • 1 large white onion diced
  • 1 green bell pepper diced
  • 1 red bell pepper diced
  • 1 cup dry white wine
  • 2 pounds fresh tomatoes coarsely chopped
  • 1 teaspoon fresh basil leaves
  • 1 tablespoon dried oregano
  • 2-1/4 pounds mixed variety mushrooms coarsely chopped
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 2 teaspoons freshly ground black pepper

Directions
  1. Put onions, peppers and half the garlic into frying pan with 1 cup oil over medium heat.
  2. Cook until soft then add wine and simmer briskly until volume is reduced by 1/3.
  3. Mix in herbs and tomatoes then simmer 20 minutes after it comes to a boil.
  4. In another frying pan heat remaining oil with remaining garlic and mushrooms.
  5. After mushrooms have released their juices and reabsorbed them add cream.
  6. Cook until thickened but do not boil or it will curdle then add to mixture in original pan.
  7. Simmer a few minutes and serve immediately.
