How to make it

  • Put onions, peppers and half the garlic into frying pan with 1 cup oil over medium heat.
  • Cook until soft then add wine and simmer briskly until volume is reduced by 1/3.
  • Mix in herbs and tomatoes then simmer 20 minutes after it comes to a boil.
  • In another frying pan heat remaining oil with remaining garlic and mushrooms.
  • After mushrooms have released their juices and reabsorbed them add cream.
  • Cook until thickened but do not boil or it will curdle then add to mixture in original pan.
  • Simmer a few minutes and serve immediately.
