Sensational Creamy Mushroom Dish

- 1-1/4 cup vegetable oil shopping list
- 3 cloves garlic finely minced shopping list
- 1 large white onion diced shopping list
- 1 green bell pepper diced shopping list
- 1 red bell pepper diced shopping list
- 1 cup dry white wine shopping list
- 2 pounds fresh tomatoes coarsely chopped shopping list
- 1 teaspoon fresh basil leaves shopping list
- 1 tablespoon dried oregano shopping list
- 2-1/4 pounds mixed variety mushrooms coarsely chopped shopping list
- 1 cup heavy cream shopping list
- 1 teaspoon salt shopping list
- 2 teaspoons freshly ground black pepper shopping list
How to make it
- Put onions, peppers and half the garlic into frying pan with 1 cup oil over medium heat.
- Cook until soft then add wine and simmer briskly until volume is reduced by 1/3.
- Mix in herbs and tomatoes then simmer 20 minutes after it comes to a boil.
- In another frying pan heat remaining oil with remaining garlic and mushrooms.
- After mushrooms have released their juices and reabsorbed them add cream.
- Cook until thickened but do not boil or it will curdle then add to mixture in original pan.
- Simmer a few minutes and serve immediately.
