Chilpotle Citrus Chicken

- 2 lbs. boneless skinless chicken breasts, sliced thin. Sometimes you can get the breasts sliced at the meat counter which can save time. shopping list
- 3 large ripe limes shopping list
- 6 large cloves garlic, smashed and diced shopping list
- 3 chilpotle peppers in adobo sauce (canned) shopping list
- 1 tsp coarse salt (add more or less to taste, I don't use much) shopping list
- 1 tsp cumin shopping list
- 1/2 cup cilantro (loose) shopping list
- 1 tbsp olive oil shopping list
How to make it
- In a small mixing bowl, squeeze the juice of the 3 limes
- Add garlic and stir
- Chop peppers finely and add to bowl, stir vigorously
- Add olive oil, salt, cumin and cilantro
- Pour in a tbsp or so of the adobo sauce from the peppers
- Mix well and let sit for 5-10 minutes
- Place chicken breasts in a 1-gallon ziploc bag or airtight container
- Pour marinade into bag and smush and shake to coat the meat evenly
- Wait about 1-2 hours maximum (too long and the lime cooks the chicken)
- Grill on medium to high heat until just done
