After looking for a good recipe in this vein, I wasn't happy so I made one up. Tasty marinade can be used for chicken, fish, or pork!

Ingredients
  • 2 lbs. boneless skinless chicken breasts, sliced thin. Sometimes you can get the breasts sliced at the meat counter which can save time.
  • 3 large ripe limes
  • 6 large cloves garlic, smashed and diced
  • 3 chilpotle peppers in adobo sauce (canned)
  • 1 tsp coarse salt (add more or less to taste, I don't use much)
  • 1 tsp cumin
  • 1/2 cup cilantro (loose)
  • 1 tbsp olive oil

Directions
  1. In a small mixing bowl, squeeze the juice of the 3 limes
  2. Add garlic and stir
  3. Chop peppers finely and add to bowl, stir vigorously
  4. Add olive oil, salt, cumin and cilantro
  5. Pour in a tbsp or so of the adobo sauce from the peppers
  6. Mix well and let sit for 5-10 minutes
  7. Place chicken breasts in a 1-gallon ziploc bag or airtight container
  8. Pour marinade into bag and smush and shake to coat the meat evenly
  9. Wait about 1-2 hours maximum (too long and the lime cooks the chicken)
  10. Grill on medium to high heat until just done
