How to make it

  • Preheat oven to 350 degrees; lightly grease baking sheet.
  • Combine flour, sugar, baking powder, baking soda and lemon zest in a medium bowl.
  • Cut in butter using pastry blender until mixture is crumbly.
  • Add lemon juice and 1 1/4 cups whipping cream, stirring just until dry ingredients are moistened.
  • On lightly floured surface roll dough to 3/4 inch thickness.
  • Cut with 2 1/2 inch round cutter, and place on baking sheet.
  • Brush tops evenly with 2 tablespoons cream.
  • Bake 17 to 19 minutes or until lightly brown.
  • Makes 10 scones
