How to make it

  • Cook the chicken. Cool and cut into small, bite-size pieces. Add the drained mandarin oranges, 2 cups chopped celery, the drained, crushed pineapple, the peanuts.
  • Mix up to ½ teaspoon of curry powder in the ½ cup of mayonnaise. Stir the curried mayonnaise into the other ingredients and toss lightly until combined.

    You can serve this in an awesome sandwich that will turn heads and create smiling faces or you can also serve this by itself with a salad with some of the same Asain Sesame dressing, mandarin oranges and slivered almonds! The combination in a salad is really good. I got the idea from a combination I had at Wendy's of all places! Their chicken salad mixes the almonds and the mandarin oranges together. Very good for you too!
