How to make it

  • If using fresh tomatoes, core and blanch in boiling water for about 1 1/2 minutes, remove and let cool in ice bath. Peel, halve and remove pulp seeds.
  • Place all ingredients ( Hunts tomatoes if using ) except oil in blender or food processor. Cover and blend until smooth.
  • Heat oil in large sauce pan over medium high heat.
  • Add processor ingredients to pot and bring to boil.
  • Reduce heat and simmer for about 10 minutes.
  • Add milk at this time if using and 1 tbsp. cornstarch.
  • Stir while simmering.
  • Garnish with yogurt and parsley. Mmmmm_Good!

    Very nice. I love tomato soup and homemade is even better. Like the yogurt garnish, just the right touch.
