Grandpa Jacks Garden Fresh Tomato Soup Recipe
Garden fresh taste and can be freezer stored. A great side with grilled cheese sandwiches.

Ingredients
  • 1 tbsp. extra virgin olive oil
  • 1/4 cup minced onion flakes
  • 8 garden grown tomatoes, or (1 can 28 0z each Hunts crushed tomatoes.)
  • 1 can ( 14 oz. ) reduced sodium chicken broth.
  • 1/2 cup whole milk. ( optional )
  • 1/4 tsp. sugar.1/2 tsp. dill weed.
  • 1/4 tsp. celery seed.
  • 1/4 tsp. pepper or to taste.
  • 1 dollup yogurt to top.
  • Sprinkle of fresh parsley leaves.

Directions
  1. If using fresh tomatoes, core and blanch in boiling water for about 1 1/2 minutes, remove and let cool in ice bath. Peel, halve and remove pulp seeds.
  2. Place all ingredients ( Hunts tomatoes if using ) except oil in blender or food processor. Cover and blend until smooth.
  3. Heat oil in large sauce pan over medium high heat.
  4. Add processor ingredients to pot and bring to boil.
  5. Reduce heat and simmer for about 10 minutes.
  6. Add milk at this time if using and 1 tbsp. cornstarch.
  7. Stir while simmering.
  8. Garnish with yogurt and parsley. Mmmmm_Good!
