Ingredients
  • 2-4 TBS olive oil
  • 1 lb stew meat - cut into bite sized pieces
  • 2 ribs celery - chopped
  • 1 Medium onion - coarsely chopped
  • 1 carrot - chopped
  • 1/4 cup banana pepper rings
  • 1 can diced Italian tomatoes
  • 1 1/2 cloves garlic - minced
  • 1/4 cup flour
  • 6 cups beef bouillon
  • 1/8 tsp crushed red pepper
  • 3 TBS light rum
  • 1/2 tsp seasoned pepper
  • 1/2 tsp salt
  • 1/2 tsp old bay seasoning
  • 3 bay leaves

Directions
  1. Mix flour, salt, seasoned pepper and old bay in a plastic, bag.
  2. Coat beef in flour and spice mixture.
  3. Using a Dutch oven or a stock pot, Brown beef in olive oil
  4. Add remaining ingredients and simmer for 2-3 hours
  5. Add additional salt and pepper to taste.
  6. I removed about 3 cups of the liquid and then gradually added it back in as needed to get the right consistency, same with the flour, I mixed up some of the left over flour into a paste to thicken the stew as needed.

Hey Mark, I call it stew it has carrots. Sounds delish! I have never used Old Bay except with fish, you have alot of flavors going on here. Send some down, and the rest of the Rum. It's grillin weather here!
