This is an incredible quiche....Serve with a side salad and your good to go

Ingredients
  • 1/2 lb. hot Italian Sausage
  • Refrigerated dough for double crust pie
  • 3 eggs
  • 1 cup ricotta cheese
  • 1 tsp. basil, dried
  • 1 cup mozzarella cheese, shredded
  • 1/4 lb. pepperoni, sliced
  • 1/2 cup Parmesan cheese, grated
  • 3/4 cup pizza sauce, heated

Directions
  1. Preheat oven to 450
  2. Remove casings from sausage
  3. Cook over medium heat stirring to crumble
  4. Drain and set aside
  5. Line 9 inch quiche dish or pie plate with half of pie dough and flute edges
  6. Bake for 5 minutes
  7. Prick pastry and bake another 5 minutes
  8. Remove from oven and reduce heat to 350
  9. In mixing bowl, mix eggs, ricotta, and basil
  10. Stir in sausage, mozzarella, pepperoni, and Parmesan cheese
  11. Spoon into baked shell
  12. Cut an 8 inch circle out of remaining pie dough
  13. Cut into 6 wedges
  14. Arrange on top of filling
  15. Bake 45-50 minutes
  16. Cool 10 minutes
  17. Spoon 2 tbls. pizza sauce over each wedge
