Tofu Quiche Recipe
A nice twist on a regular quiche, made with both eggs and tofu. Great with a side salad.

Ingredients
  • 16 oz pkg medium firm tofu
  • 2 eggs
  • Unbaked 9" pie shell
  • 1 cup aged cheddar, grated
  • 1 Tbsp butter
  • 1/2 cup green and/or red bell pepper, diced
  • 1/2 cup each celery, onion and flat leaf parsley, chopped
  • 2 tsp salt
  • 2 Tbsp flour

Directions
  1. Preheat oven to 350F.
  2. Wrap tofu in a muslin cloth or paper towel and squeeze dry.
  3. In a saute pan, cook all vegetables in melted butter until tender.
  4. In a bowl, beat eggs together with tofu. Stir in vegetables, salt and flour and pour into pie shell. Sprinkle grated cheese on top.
  5. Bake 40-45 minutes or until golden brown.
  6. Let stand 10 minutes before serving.

I like the idea of incoporating tofu into the quiche for double impact of protein. very smart recipe.


Eggs aren't listed in the ingredients, but they are in the directions. :( confused.


Sorry for the omission! I've corrected the recipe to indicate that 2 eggs are called for.

Alterations


Haven't had much tofu in my life; but really beginning to like it. Made this tonight and very good...light, fluffy, very tasty. Added some chopped onions, mushrooms, green chilis just to have more stuff in it. Recommend to anyone. Will certainly have again.
