Lemon Sour Cream Cake Recipe
An easy cake for those that love the real taste of lemon. Delicious either cold or straight out of the oven with ice-cream, cream or yogurt.

Ingredients
  • 125 gm Butter (Room Temp)
  • 1 Cup Caster sugar
  • Grated rind and juice of one Lemon
  • 2 Eggs
  • 1 Cup Self raising flour (sifted)
  • 1/2 Cup Sour Cream
  • Icing sugar

Directions
  1. Preheat Oven at 160 Deg C and lightly oil sides of a 20cm cake tin. Line base and sides with baking paper.
  2. Beat butter till creamy
  3. Gradually add sugar and beat till light and pale
  4. Mix in rind
  5. Add Eggs, one at a time, beating well after each addition
  6. Fold flour into mixture alternately with sour cream and juice
  7. Pour into prepared greased and lined tin
  8. Bake in moderately slow oven for 35-40 Mins or until cooked
  9. Allow the cake to rest in the tin for 5 Mins, invert and sprinkle a little icing sugar over the top
