How to make it

  • Heat the olive oil and add onion, garlic, ginger
  • When onion slightly brown, add curry paste and mix well.
  • If using chicken or shrimp,add to curry paste and stir fry till cooked
  • Add all the veges (except bamboo shoots) and mix well
  • Pour in the stock and let it cook for 10 to 15 minutes
  • Add tofu
  • Add bamboo shoots
  • Add lime juice and stir
  • Add corn flour and stir
  • Cook the soup for another 5 minutes
  • Add fish sauce to taste
  • Garnish with cilantro/coriander leaves
