Thai Style Hot And Sour Soup

- 1 tbs red curry paste shopping list
- 1.5 tsp chopped garlic shopping list
- 1 tsp chopped ginger (preferably galanga) shopping list
- 3 kaffir lime leaves shopping list
- 8 ounce (250 grams) firm tofu cake, drained and cubed shopping list
- 4 cups of chicken/ vegetable stock shopping list
- 1 medium onion, chopped shopping list
- 2 carrots, peeled and sliced thinly shopping list
- 1 green bell peppers, sliced shopping list
- 8 ounces (250 grams) shitake mushrooms, cleaned and halved shopping list
- 8 ounces (250 grams) bamboo shoots (available in cans at Asian food stores) shopping list
- 1 tsp corn or tapioca flour dissolved in ¼ cup of water shopping list
- juice from ½ a lime shopping list
- 2-3 stalks of cilantro or coriader leaves, chopped for garnishing shopping list
- Fish sauce: according to taste shopping list
- Optional: minced shrimp or shredded chicken shopping list
How to make it
- Heat the olive oil and add onion, garlic, ginger
- When onion slightly brown, add curry paste and mix well.
- If using chicken or shrimp,add to curry paste and stir fry till cooked
- Add all the veges (except bamboo shoots) and mix well
- Pour in the stock and let it cook for 10 to 15 minutes
- Add tofu
- Add bamboo shoots
- Add lime juice and stir
- Add corn flour and stir
- Cook the soup for another 5 minutes
- Add fish sauce to taste
- Garnish with cilantro/coriander leaves
