Avocado Mousse Recipe
Not so much a guacemole, it's a blended, light, pastel-green topping that suits burgers as well as it does crepes and even sole and lobster.

Ingredients
  • 2 ripe Haas avocados, peeled and pitted
  • 1 Tbsp fresh lemon juice
  • 1/3 c creme fraiche or sour cream
  • 1/2 tsp salt
  • 1/4 tsp Tabasco
  • 1/4 c cold water

Directions
  1. Combine all ingredients in a blender and process until smooth, about 1 minute.
  2. Serve immediately or cover tightly and refrigerate.
  3. Because this is so light it does not last long in storage.
