Ingredients
  • 8 Tbs. (1 stick}butter at room tempature
  • 1 cup sugar
  • 1 large egg {room temp.}
  • 1/2 tsp, Baking soda
  • 1 cup thick applesauce{I use cinnamon applesauce in Jar}
  • 2 cups all-[urpose flour{Not self-rising}
  • 1 tsp. baking powder
  • 1/2 tsp. Salt
  • 1 tsp. cinnamon
  • 1/4 tsp ground cloves
  • 1/4 cup dried cranberries
  • 1/4 tsp. nutmeg
  • 1/2 cup raisins {I use sunmaid}
  • GLAZE-
  • 6 Tablespoons lemon Juice
  • 2 cups confectionioner's sugar{Powder sugar}

Directions
  1. PREHEAT OVEN- 350
  2. Butter a 9x5 inch loaf pan, line bottom with parchment paper and butter
  3. Beat butter and sugar with an electic mixer untill light and fluffy beat in egg stir baking soda into applesauce mix dry ingredients then add to butter mixture in 3 additions alternating applesauce
  4. Stir in raisins and dried cranberrys
  5. Pour batter into pan bake untill top springs back when touched 50 minutes. Cool on wire rack 10 minutes then turn out on rack
  6. Make Glaze mix lemon Jucie and confectoners sugar spoon glaze over cake
