Caribbean Baked Chicken Recipe
I was looking to do something simple with a whole chicken I had and this spicy combination was on mark for easy and low calorie.

Ingredients
  • 1 (2 to 3 pound) whole chicken, cut into pieces
  • 2 tbsp olive oil
  • Jerk Seasoning
  • INGREDIENTS (Nutrition)
  • 1 tablespoon salt
  • 1 teaspoon ground allspice
  • 1 teaspoon packed brown sugar
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried minced garlic
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon dried thyme leaves

Directions
  1. Preheat an oven to 400 degrees F (200 degrees C).
  2. Combine the Jerk seasoning in a small bowl; set aside.
  3. Place the chicken pieces in a 9x13 inch baking dish, and coat with the oil; arrange skin-side up.
  4. Sprinkle evenly with the spice mixture.
  5. Bake the chicken in the preheated oven until no longer pink at the bone and the juices run clear, about 45 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
