Ingredients

leftover mashed potatoes (3 cups)

1 egg

1 green onion chopped fine end to end

1/2c flour

Directions

mix leftover mashed potatoes with egg and chopped green onion & flour, form into patties and fry on hot greased griddle 'till golden brown
