Soft Mead Recipe
I found this recipe in Kitchen Witch's Cookbook by Patricia Telesco. It is good to make it easier to take certain folk remedies. Also it is a good basic drink for pretty much any purpose depending on the fruit you include.

Ingredients
  • 4c Spring Water
  • 1c Honey
  • 1/2 t Nutmeg
  • 1/2 t Ginger
  • 1/4 t Cinnamon
  • 1 each lemon and orange(sliced)

Directions
  1. Bring to a boil everything except the fruit in a medium sauce pot.(For best results use a stainless steel or non-metallic pan.
  2. Stir until the honey dissolves; the heaviness at the bottom of the pan will disappear.
  3. Use Wooden spoon to skim off the film that rises, until clear.
  4. Add the fruit, squeezing before placing in the water.
  5. Cool completely
  6. Strain
  7. Pour into a bottle
  8. Store in the refrigerator.
