Celery Soup

- 1/2 lb. of julienned carrots shopping list
- 1/2 lb. of chopped onions shopping list
- 3 qts. of chicken stock shopping list
- 3 lb. coarsely chopped celery shopping list
- 3 qts. of hot milk shopping list
- 1 c. of margarine shopping list
- 1 c. of all-purpose flour shopping list
- 1 tbsp. of salt shopping list
- 1 tsp. of ground white pepper shopping list
How to make it
- You begin by pouring your stock into a large pot over medium flame.
- After this is boiling, add your celery, carrots and onion.
- In a separate bowl ,wisk the flour, salt, pepper, and milk. Once this is whisked, add this also.
- Let this boil approx. 10 min.
- Now you want to strain the veggies using a sieve.
- And Serve!

The 1c. does indeed stand for a cup.
Melt the butter. Whisk the flour, salt, and pepper together and then into the butter to make a roux.
Add hot milk a cup at a time to thin out the roux.
