Ingredients
  • 1/2 lb. of julienned carrots
  • 1/2 lb. of chopped onions
  • 3 qts. of chicken stock
  • 3 lb. coarsely chopped celery
  • 3 qts. of hot milk
  • 1 c. of margarine
  • 1 c. of all-purpose flour
  • 1 tbsp. of salt
  • 1 tsp. of ground white pepper

Directions
  1. You begin by pouring your stock into a large pot over medium flame.
  2. After this is boiling, add your celery, carrots and onion.
  3. In a separate bowl ,wisk the flour, salt, pepper, and milk. Once this is whisked, add this also.
  4. Let this boil approx. 10 min.
  5. Now you want to strain the veggies using a sieve.
  6. And Serve!

Could someone tell me what 1c. stands for is it a cup and when do you add the margarine.

The 1c. does indeed stand for a cup.
Melt the butter. Whisk the flour, salt, and pepper together and then into the butter to make a roux.
Add hot milk a cup at a time to thin out the roux.
Add the milk/roux mixture to the vegetable pot.
After the boil time, blend the soup with an imersion blender or a couple cups at a time in a stand blender and return to soup.
Strain the soup if you prefer.

Doubled the salt and pepper amounts for my pot of soup.
