This tender, juicy chicken is a WW recipe. The photo and recipe are from the Momentum book. Serving: 1 chicken breast, 2.-/3 C sauce with vegetables and 1 C pasta 9 pts.

Ingredients
  • 4 (5 oz) boneless, skinless chicken breasts
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tsp olive oil
  • ½ lb mixed mushrooms, halved
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 2 garlic cloves, minced
  • 1 tsp, herbs de Provence
  • 1 Tbl flour
  • 1 C, low fat, low sodium chicken broth
  • ¾ C dry white wine
  • 2 Tbl chopped fresh parsley (optioal)
  • 4 C hot cooked whole wheat fettuccine

Directions
  1. Sprinkle the chicken with salt and pepper
  2. Heat 1 tsp oil in large skillet over medium high heat
  3. Add the chicken and cook, turning occasionally, until browned, about 7 minutes.
  4. Transfer to a plate
  5. Add the remaining 1 tsp oil and the mushrooms to the skillet
  6. Cook, stirring frequently, until the mushrooms are browned, about 5 minutes
  7. Stir in the onion, carrot, celery, garlic and herb de provence
  8. Cook just until the onion is softened,a bout 3 minutes
  9. Sprinkle with flour and cook, stirring constantly, 1 minute longer
  10. Add the broth and white wine and bring to a boil
  11. Return chicken and any accumulated juices to skillet
  12. Reduce the heat and simmer, covered, until the chicken is cooked through, about 20 minutes
  13. Sprinkle with the parsley, if using
  14. Serve with the pasta
