Chicken with Mushrooms and White Wine

- 4 (5 oz) boneless, skinless chicken breasts shopping list
- ½ tsp salt shopping list
- ¼ tsp black pepper shopping list
- 2 tsp olive oil shopping list
- ½ lb mixed mushrooms, halved shopping list
- 1 onion, chopped shopping list
- 1 carrot, chopped shopping list
- 1 celery stalk, chopped shopping list
- 2 garlic cloves, minced shopping list
- 1 tsp, herbs de Provence shopping list
- 1 Tbl flour shopping list
- 1 C, low fat, low sodium chicken broth shopping list
- ¾ C dry white wine shopping list
- 2 Tbl chopped fresh parsley (optioal) shopping list
- 4 C hot cooked whole wheat fettuccine shopping list
How to make it
- Sprinkle the chicken with salt and pepper
- Heat 1 tsp oil in large skillet over medium high heat
- Add the chicken and cook, turning occasionally, until browned, about 7 minutes.
- Transfer to a plate
- Add the remaining 1 tsp oil and the mushrooms to the skillet
- Cook, stirring frequently, until the mushrooms are browned, about 5 minutes
- Stir in the onion, carrot, celery, garlic and herb de provence
- Cook just until the onion is softened,a bout 3 minutes
- Sprinkle with flour and cook, stirring constantly, 1 minute longer
- Add the broth and white wine and bring to a boil
- Return chicken and any accumulated juices to skillet
- Reduce the heat and simmer, covered, until the chicken is cooked through, about 20 minutes
- Sprinkle with the parsley, if using
- Serve with the pasta
