Black-eyed Pea Supper Dish

- 1 can black-eyed peas shopping list
- 1/2 lb. bulk sausage (I use regular, but spicy or sage would be ok) shopping list
- 1/2 cup chopped green pepper shopping list
- 1/2 cup chopped onion shopping list
- 1 clove garlic, minced shopping list
- 1 can tomatoes (Rotels w/ green chilis if you want it spicy) shopping list
- 1/4 teasp. each black pepper, oregano, and italian seasoning shopping list
- 1/2-1 cup grated cheese (like colby or mild cheddar) shopping list
How to make it
- Brown and crumble the sausage, drain
- Add green pepper and onion and garlic and cook about 5 mins
- Stir in seasoning
- Stir in tomatoes
- Add peas and simmer, covered, for 15 minutes
- Serve with cheese sprinkled on top
