Black-eyed Pea Supper Dish Recipe
Quick comfort food--slightly spicy, just plain yummy--great with corn bread

Ingredients
  • 1 can black-eyed peas
  • 1/2 lb. bulk sausage (I use regular, but spicy or sage would be ok)
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1 can tomatoes (Rotels w/ green chilis if you want it spicy)
  • 1/4 teasp. each black pepper, oregano, and Italian seasoning
  • 1/2-1 cup grated cheese (like colby or mild cheddar)

Directions
  1. Brown and crumble the sausage, drain
  2. Add green pepper and onion and garlic and cook about 5 mins
  3. Stir in seasoning
  4. Stir in tomatoes
  5. Add peas and simmer, covered, for 15 minutes
  6. Serve with cheese sprinkled on top
