Fruity Breakfast Bars

- 10 ounces apple sauce shopping list
- 1/2 cup chopped dried apricots shopping list
- 3/4 cup raisins shopping list
- 1/4 sugar (can omit) shopping list
- 1/3 cup sunflower seeds shopping list
- 2 t sesame seeds shopping list
- 1/4 cup raw pumpkin seeds shopping list
- 1 cup rolled oats (not instant oatmeal) shopping list
- 2/3 cup self-rising whole wheat flour (or flour +1 T baking soda) shopping list
- 2/3 cup dry unsweetened coconut shopping list
- 2 eggs shopping list
- Note: Can add copped nuts with fruit such as almonds or pecans shopping list
- Note II: I always add ground flax (about 2-4 T) shopping list
How to make it
- Preheat oven to 400 F
- Grease 8 inch square pan, shallow or deep is fine
- Lin pan with parchment or tin foil (let it hang over sides for ease of removal)
- Put apple sauce in lg bowl with raisins, apricots, sugar, and sunflower seeds
- Stir mixture together
- Add oats, flour, coconut, and eggs to the mixture and gently stir together until evenly combined
- Turn mixture into the pan and spread to the edges in an even layer
- Bake for about 25 minutes or until golden brown
- Leave to cool in the pan, then lift out and cut into bars
