Ingredients
  • 4 fresh Orange Roughy fillets
  • salt and pepper
  • 1/4 C Dijon mustard
  • 1T Butter, melted
  • 1/2 C dry bread crumbs
  • 1/2 C Pecans, roughly ground
  • non stick cooking spray

Directions
  1. Preheat oven to 475.
  2. Rinse fillets, pat dry and place rounded side up on an oiled baking sheet.
  3. Brush each filler with 1 T mustard.
  4. Combine butter, bread crumbs and pecans.
  5. Spread 1/4 fo bread crumb mixture over each fillet and press in gently but firmly.
  6. Spray each fillet with cooking spray.
  7. Bake 13 - 15 minutes or until fish flakes easily when tested and the surface is golden brown.
