Pecan Dijon Roughy

- 4 fresh orange roughy fillets shopping list
- salt and pepper shopping list
- 1/4 C Dijon mustard shopping list
- 1T butter, melted shopping list
- 1/2 C dry bread crumbs shopping list
- 1/2 C pecans, roughly ground shopping list
- non stick cooking spray shopping list
How to make it
- Preheat oven to 475.
- Rinse fillets, pat dry and place rounded side up on an oiled baking sheet.
- Brush each filler with 1 T mustard.
- Combine butter, bread crumbs and pecans.
- Spread 1/4 fo bread crumb mixture over each fillet and press in gently but firmly.
- Spray each fillet with cooking spray.
- Bake 13 - 15 minutes or until fish flakes easily when tested and the surface is golden brown.
