Ingredients

1 large Spanish onion

2 slices tomatoes

1 teaspoon salt

1 teaspoon freshly ground black pepper

2 small zucchini

1 cup croutons

1 cup shredded pepper Jack cheese

Directions

Peel and thinly slice onion and layer in casserole with zucchini, tomatoes and croutons.

Sprinkle each layer with salt and pepper.

Cover and bake at 350 for 1 hour uncovered then sprinkle with cheese and bake until melted.
