Italian Sausage Frittata Recipe
I can't wait to make this one... ned to go get some hot sausage at the store... I will put the tomatoe sauce on the top.... the recipe is from Charles Gipe, Jr., Executive Chef at Hershey Entertainment Complex

Ingredients
  • 3 hot Italian sausage links, cooked, cut into 1/4" dice
  • 4 ounces melted butter
  • 2 ounces olive oil
  • 2 cups red skin potatoes, boiled, cooled, cut in 1/4" dice
  • 1/2 cup onion, cut into medium dice
  • 1/8 cup grated parmesan cheese
  • Salt and pepper, to taste
  • 6 eggs

Directions
  1. In a 10" non-stick pan, heat butter and olive oil over medium-high heat. Add potatoes and onions. Cook until golden brown. Add the cooked sausage. Mix cheese, salt and black pepper, and eggs in a bowl. Pour mixture over potatoes and sausage. Cook until it starts to pull away from the sides, flip, and reduce heat until the frittata is done. Cut into 4 wedges and serve.
  2. Notes: Options: top with a tomato sauce
