How to make it

  • In a 10" non-stick pan, heat butter and olive oil over medium-high heat. Add potatoes and onions. Cook until golden brown. Add the cooked sausage. Mix cheese, salt and black pepper, and eggs in a bowl. Pour mixture over potatoes and sausage. Cook until it starts to pull away from the sides, flip, and reduce heat until the frittata is done. Cut into 4 wedges and serve.
  • Notes: Options: top with a tomato sauce
