Italian Sausage Frittata

- 3 hot italian sausage links, cooked, cut into 1/4" dice shopping list
- 4 ounces melted butter shopping list
- 2 ounces olive oil shopping list
- 2 cups red skin potatoes, boiled, cooled, cut in 1/4" dice shopping list
- 1/2 cup onion, cut into medium dice shopping list
- 1/8 cup grated parmesan cheese shopping list
- salt and pepper, to taste shopping list
- 6 eggs shopping list
How to make it
- In a 10" non-stick pan, heat butter and olive oil over medium-high heat. Add potatoes and onions. Cook until golden brown. Add the cooked sausage. Mix cheese, salt and black pepper, and eggs in a bowl. Pour mixture over potatoes and sausage. Cook until it starts to pull away from the sides, flip, and reduce heat until the frittata is done. Cut into 4 wedges and serve.
- Notes: Options: top with a tomato sauce
