Savory Chicken Casserole

- 4 Boneless chicken breasts shopping list
- 2 Cups uncooked rice shopping list
- 4 Cups water shopping list
- 1 T. chicken bouillon shopping list
- 1 Half large vidalia onion shopping list
- 3-4 cloves garlic shopping list
- 2 T. olive oil shopping list
- 2 Cups broccoli (florets or pieces) shopping list
- 3 Cups cheddar cheese shopping list
- 3 Cups milk shopping list
- 1 Can of cream of chicken soup shopping list
- 1 t. marjoram shopping list
- 1 t. thyme shopping list
- 3 T. butter shopping list
- 2 T. flour shopping list
- 1 t. cornstarch shopping list
- 1 t. salt and 1 t. pepper shopping list
- 1/2 Cup (canned) fried onions (optional) shopping list
How to make it
- Put the chicken breasts in a pot and cover with water. Stir in bouillon. Boil at medium-high heat for 20-30 minutes or until chicken is no longer pink in the middle. Cut into small chunks when cooled.
- In a large microwave safe dish, place rinsed rice and the 4 cups of water and microwave for 25 minutes or until done. I put some of the chicken broth from the boiled chicken in for the last five minutes to up the flavor of the rice. (Also if the rice needs an extra five minutes and is out of water -- of course, you can cook the rice on the stove)
- Steam the broccoli for 8 minutes if it's fresh or cook if frozen according to packaged directions, set aside.
- Chop onions and garlic, saute in olive oil over medium heat for 5 minutes or until onions become transparent.
- Next, start your sauce by melting the butter and whisking in the flour over medium-high heat. Cook for 2 minutes (don't let it brown) and then slowly stir in the milk, whisking constantly. If the sauce doesn't thicken once the milk has become hot, add the cornstarch. Add the cream of chicken soup.
- Add salt, pepper, marjoram and thyme and continue whisking. Turn the heat down to medium.
- Stir in 2 of the 3 cups of cheddar until thoroughly melted.
- In a big bowl, combine the chicken and the rice. Pour 3/4 of the cheese mixture over the chicken and rice and mix. You may want it creamier or less.
- Mix in the broccoli and the sauteed onions and garlic.
- Pour into a 9X13 Pyrex dish or a large casserole dish.
- Top with the remaining 1 cup of cheddar and the fried onions.
- Bake for 15 minutes and serve!
