Yet another lowfat creation, a tasty dish I created but couldn't think of a name for. The name is courtesy of Peclare.

Ingredients
  • 3 celery stalks chopped
  • 4 cups of water
  • 1 box of frozen spinach, thawed
  • 2 boullion cubes, I use Goya beef, but chicken would work too
  • 1 lb of ground turkey
  • 1 can of diced tomatos- i used Delmonte with the garlic and basil already added
  • 2 cups of brown rice I used Uncle Bens
  • fresh ground black pepper

Directions
  1. In a medium pot with a cover add boullion cubes,water, and celery, cook for a few minutes until celery is soft add in thawed spinach, add in the rice
  2. bring to a boil, cover and lower heat to simmer until rice is cooked (uncle Ben's takes about 20 minutes)
  3. meanwhile
  4. In a large frying pan brown the ground turkey, cook through until no longer pink add the tomatoes and add some ground pepper to taste.
  5. add your cooked rice mixture to the ground turkey & tomatoes, mix together and serve.
