Lemon Delight Chess Pie

- Prepared pastry for a 9-inch pie plate shopping list
- 6 tablespoons butter, melted shopping list
- 1 2/3 cups sugar shopping list
- 4 eggs shopping list
- 2 tablespoons cornmeal shopping list
- 2 tablespoons lemon peel, grated shopping list
- 1/4 cup lemon juice shopping list
- 1 teaspoon vanilla shopping list
How to make it
- Preheat oven to 450 degrees
- Unfold pie pastry and gently ease into pie plate
- Flute pastry around edge of pie plate
- In a large bowl, beat butter, sugar and eggs until smooth
- Add cornmeal, lemon peel, lemon juice and vanilla
- Beat until thoroughly blended
- Pour into pie shell and bake for 10 minutes
- Reduce heat to 350 degrees; continue baking for 30-40 minutes or until knife inserted in center comes out clean
- Cool on wire rack for no more than 2 hours
- Serve at room temperature or chilled
- Refrigerate leftovers
