How to make it

  • In pot heat oil and sauté onion and garlic until fragrant and translucent.
  • Add stock and bring to a boil then reduce heat and add orzo then simmer 10 minutes.
  • Stir in spinach and tomatoes then simmer 5 minutes and stir in basil and pepper.
  • Ladle into soup bowls and sprinkle with parmesan.
