TURKEY MUSHROOM CASSEROLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Inman Estate in Mineral Wells, Texas in 1990.

Ingredients
  • 6 slices bacon
  • 3/4 cup chopped white onion
  • 1/2 cup chopped celery
  • 1/4 cup chopped green pepper
  • 4 ounce can mushroom stems and pieces drained
  • 1 can condensed cream of celery soup
  • 1 cup dairy sour cream
  • 3 cups cut up cooked turkey
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 cups baking mix
  • 1/2 cup milk
  • 2 eggs
  • 1/2 cup shredded cheddar cheese

Directions
  1. Heat oven to 350 then grease 2 quart round casserole.
  2. Fry bacon until crisp then remove from skillet and crumble.
  3. Cook and stir onion, celery, green pepper and mushrooms in bacon fat until tender.
  4. Stir in soup, sour cream, turkey, salt, pepper and bacon then heat until bubbly.
  5. Spread in casserole then mix remaining ingredients just until moist.
  6. Spread over turkey mixture then bake uncovered for 30 minutes.
