Lovely savory-sweet spice muffins. These make an excellent snack. Source: Southern Living 1984 Annual Recipes

Ingredients
  • 1 1/2cups all-purpose flour
  • 3/4 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup plus 1 tablespoon oil
  • 1 cup chopped pecans

Directions
  1. Mix first 5 ingredients together, then add egg, milk and oil.
  2. Mix until almost blended, adding pecans. Do not over mix batter.
  3. Fill greased muffin pans two-thirds full.
  4. Bake muffins at 400 for 20 to 25 minutes.
