Ingredients
  • 2 Tbsp caster sugar
  • 2 tsp instant yeast
  • 1 cup warm water
  • 1 cup plain flour
  • 1 ½ cup wholemeal flour
  • 1 cup rye flour
  • ¼ cup milk powder
  • 1 tsp salt
  • 1 Tbsp walnuts

Directions
  1. In a small jug, whisk together the sugar, yeast and water. And let stand for 10 minutes.
  2. Meanwhile, combine the remaining ingredients in the food processor, whis for a few secs.
  3. With the motor going, pour in the yeasty water. Scrape down the sides and process till its all mixed together good.
  4. Take out the dough and knead for 10 minute or so. Roll into a ball and place in an oiled bowl. Cover and leave in the in a warm place to rise for an hour.
  5. Punch down dough, knead a bit then shape into a loaf and place in a lined bread tin. Leave in a warm spot for another 40 minutes (uncovered).
  6. Bake for 15 minutes at 180, then lower temp to 160 and cook for a further 40 minutes.
