This cooling herbal chinese soup is refreshing and soothes the throat. My family loves it.

Ingredients
  • 1kg winter melon without skin (seeded and cut into pieces)
  • 1 whole chicken (with bones)
  • 10 red dates (cored)
  • 8 cups water
  • some salt
  • 1tbsp soy sause

Directions
  1. Rinse the chic and cut into pieces.
  2. Blanch into boiling water for a while, remove and drained.
  3. Wash the red dates in warm water.
  4. Season the chic with salt and later wash away some of the salt.
  5. Place all ingrdients into a deep pot, pour in the water and bring to boil.
  6. Cover, cook over low heat for approximately 2 hours.
  7. Lastly add in the soy sauce and some salt to taste. Serve hot.

I don't know the diffrence in red dates and regular dates.. Are they the same? This sounds so good and simple.. I love winter melon soup..

Well red dates is a kind of chinese dried herbal food. It is red in colour and you have to simply rinse it in hot water before cooking. These dates are rich in vitamins C, hope you can find the dates!
