How to make it

  • Julienne the peppers, set aside
  • Slice red onion, thin
  • Salt and Pepper the Turkey Cutlets to taste, cook in olive oil and butter until cooked all the way though, remove from pan and cover with foil.
  • Melt 1 tbsp in pan and saute onions until carmelized, remove and set onions aside (make sure to scrap up all the bits from the meat for more flavor.
  • Melt other tbsp butter in pan, add olive oil and stir fry all the bell peppers, cook them to your taste (I prefer them with a little crunch)
  • Remove foil from cutlets, slice in strips and add to pan
  • Add onions to peppers, add garlic and soy sauce, sundried tomatoes
  • cover and simmer
  • Salt and Pepper to taste
  • Serve with warm toasted pine nuts on top over rice
  • You could also make fatitas (sp) with this, just wrap it up in a tortilla :)

    What a beautiful presentation of this recipe, you did a great job laying out the pictures. The recipe itself sounds fantastic. I will be making this soon. Great post and a very high 5.
