Ingredients
  • 300 g dried dates, roughly chopped
  • 1/2 tsp bi-carb soda
  • 75 g walnuts, roughly chopped
  • 1 cup self-raising flour (you can use wholemeal if you like too)
  • 2 Tbsp raw sugar
  • 1/2 tsp ginger
  • 1/2 tsp cinnamon
  • 1 egg, lightly beaten
  • 1 Tbsp oil
  • **ICING**
  • 1/3 cup icing sugar
  • 1/2 tsp lemon essence OR lemon rind.. or orange would be good too...
  • 2-3 Tbsp boiling water

Directions
  1. Preheat oven to 180 C (350 F)
  2. Place dates in a saucepan with 1 cup of water. Bring to a boil then simmer till nearly all the liquid has been absorbed. Remove from heat and stir in the bi-carb soda. Set aside to cool for a bit.
  3. Meanwhile, in a large bowl, combine the nuts, flour sugar and spices. Make a well in the centre.
  4. Add the combined egg and oil to the dry ingredients, then stir in the dates. Mix well.
  5. Spoon mixture into patty pans and bake for 25 minutes or until a skewer comes out clean.
  6. Let them cool then drizzle over icing.
  7. To make the icing, just mix up the ingredients in a bowl, duh.
