little moist date and walnut cakes

- 300 g dried dates, roughly chopped shopping list
- 1/2 tsp bi-carb soda shopping list
- 75 g walnuts, roughly chopped shopping list
- 1 cup self-raising flour (you can use wholemeal if you like too) shopping list
- 2 Tbsp raw sugar shopping list
- 1/2 tsp ginger shopping list
- 1/2 tsp cinnamon shopping list
- 1 egg, lightly beaten shopping list
- 1 Tbsp oil shopping list
- **ICING** shopping list
- 1/3 cup icing sugar shopping list
- 1/2 tsp lemon essence OR lemon rind.. or orange would be good too... shopping list
- 2-3 Tbsp boiling water shopping list
How to make it
- Preheat oven to 180 C (350 F)
- Place dates in a saucepan with 1 cup of water. Bring to a boil then simmer till nearly all the liquid has been absorbed. Remove from heat and stir in the bi-carb soda. Set aside to cool for a bit.
- Meanwhile, in a large bowl, combine the nuts, flour sugar and spices. Make a well in the centre.
- Add the combined egg and oil to the dry ingredients, then stir in the dates. Mix well.
- Spoon mixture into patty pans and bake for 25 minutes or until a skewer comes out clean.
- Let them cool then drizzle over icing.
- To make the icing, just mix up the ingredients in a bowl, duh.
