I cannot imagine the flavor and lightness of this dessert from Mark Logan at allrecipes. I'm looking forward to trying it during our long, hot summer. Cook time does not include freeze time.

Ingredients
  • 1 cup sugar
  • 1 cup water
  • 3/4 cup fresh lime juice
  • 20 fresh basil leaves, minced

Directions
  1. Combine sugar and water in a small saucepan.
  2. Bring to a boil.
  3. Stir well until sugar dissolves.
  4. Allow to boil 1 minute.
  5. Remove from heat.
  6. Combine syrup, lime juice and basil in blender and puree.
  7. Pour mixture into a container and cover.
  8. Store in freezer until completely frozen, about 2 hours.
  9. Break frozen mixture into pieces.
  10. Place in blender and blend until smooth.
  11. Return to container, cover and store in freezer until ready to serve.
