Australian Lamingtons

- 2 cups all-purpose flour shopping list
- 1 teaspoon baking powder shopping list
- pinch of salt shopping list
- 1 cup butter, room temperature shopping list
- 1 cup granulated sugar shopping list
- 1 teaspoon vanilla shopping list
- 4 eggs shopping list
- 1 cup finely chopped toasted almonds, optional shopping list
- 6 cups powdered sugar shopping list
- 2/3 cup unsweetened cocoa powder shopping list
- 2 teaspoons vanilla extract shopping list
- 11 tablespoons milk shopping list
How to make it
- Preheat oven to 375°F.
- Liberally grease 9" x 13" pan.
- Combine flour, baking powder, and salt; set aside.
- Cream butter and sugar.
- Add vanilla.
- Gradually add eggs and mix well.
- Slowly add the dry ingredients.
- Fold in almonds.
- Pour batter in pan.
- Bake about 15-20 minutes or just until a toothpick inserted in the center comes out clean.
- Place baking pan on wire rack to cool.
- Once cool remove form pan and cut into squares.
- In a large bowl, whisk together powered sugar and cocoa until no lumps remain.
- Add vanilla and 4 tablespoons milk.
- Add enough of the remaining milk to make a smooth and creamy.
- Pour mixture on top of cookies.
- Sprinkle tops with coconut.
- Refrigerate until set.
